Rob's Golden Curry

I just love this curry that my husband occaisionally makes. He finally agreed to let me write down the recipe. If possible buy the ingrediants at an Asian Market he claims it makes a huge difference! (good coconut milk, good curry paste, etc.)

Ingredients:
About 2 lbs boneless, skinless chicken breast; cut into bite sized slices
2 tbsp Olive Oil
½ Onion; sliced thinly into strips
3 Cloves Garlic; chopped
Salt & Pepper to taste
¼ C Yellow Curry Paste (paste is better than powder)
3-4 15 oz cans Coconut Milk
2 tsp Thai Fish Sauce
Juice of 1 lime
1-15 oz can Bamboo shoots (optional)
1-15 oz can Oriental Straw Mushrooms (optional)
1-15 oz can Baby Corn (optional)
Thai Garlic Chili Sauce
Jasmine Rice

Instructions:
In a large sauce pan brown the chicken in olive oil, salt and pepper to taste; add onion and garlic. Add curry when chicken is almost cooked through and onion is translucent. Stir in coconut milk, add fish sauce. Add vegetables and lime juice. Heat until just boiling, reduce heat and simmer for about 30 minutes. Serve over Jasmine rice and add chili sauce for additional heat.

I am a longtime Arizona Cardinal fan. In the past I would probably make that statement anonymously. It is hard to explain to others (except maybe Lions fans) how painful it is to follow a team year after year that does not play any meaningful games past week eight! The "same ol' Cardinals" always seemed to find new and more heart-wrenching ways to lose (i.e. "They are who we thought they were").
This season was different. I realized this when Rob's mom gave us an early Christmas present and we were able to attend the Cards vs. 49ers monday night game in November. I was shocked to see how many Cardinal fans there actually were. For the longest time I was the only Cardinal fan I knew.
Anyway, I stuck with them. I sure had a great time watching them win each improbable playoff game and end up in the Super Bowl. In fact I was so caught up that in a moment of weakness just after the first playoff game (aided by a lemon-drop martini) I declared to Rob and Jake "If the Cardinals win the Super Bowl I think I'll get a Cardinal tattoo and you guys can pick out where it goes". During the game on Sunday with about 2:30 to go there were about 7 of us planning an outing to the tattoo shop and how they were all going to watch the inking; I bet I could have talked at least my neighbor Don into a Card tat also! However, even after our house doing their best to help the Cards (Josh did a great job staying in the bathroom - way to support the team!) they just couldn't do it, and fell short of the prize. We had a great time and I so glad we have such good friends and family to share these fun times with. That made the day awesome (even though it was depressing at the end).

I am extremely dissappointed.

I can't wait until next season!

Christmas 2008

















We had a wonderful and quiet Christmas this year. the Holiday began with a nice ham dinner with Nova and Dan. After dinner all five of us played a little Wii bowling (Rob must be practicing when no one is home!)

We got up at 5:00 am on Christmas morning, Jake was too excited to sleep any longer. We opened our gifts and basically had a relaxing, lounging day. We layed around, Jake played his new games and I watched the Suns lose a tough one to the hated Spurs.

I hope everyone had a joyful Christmas and their Christmas wishes came true; I know mine did.

Baked Squash and Apples

This is one of my favorite dishes. I never get to make it because no one in my family besides me likes squash. It would be a great Thanksgiving side dish. Yummy!

1 butternut squash
1/2 tsp. cinnamon
1/2 c. brown sugar
2-3 baking apples, peeled cored & cut into 12 slices each
1/4 c. melted butter
1tbsp. flour
1tsp. salt

Heat the oven to 350 degrees. Cut squash in half. Remove seeds and fibers; pare squash, cut into 1/2 inch slices. Arrange squash in ungreased 11x7 baking dish; top with apples. Combine dry ingredients and sprinkle over apples. Drizzle melted butter over all. Bake 50-60 min. or until squash is tender. (Serves 6)

Hail Storm 11/9/08











We had quite the hail storm this afternoon. It was awesome! We are weird here in Arizona; we get excited when it rains. We had some neighbors over and none of us could remember the last time it rained.
Anyway, the hail was cool. It's about 75-80 degrees these days so it seems so weird to have these marble sized ice-balls fall from the sky. It lasted about 45 minutes. At the end of the storm my mentally challanged dog Lucky got out the front door and went for a run around the neighborhood. She came back when she got tired, and took a nap.




Halloween 2008

For halloween this year Jake decided to be the Joker and his friend Josh was the very scary Devil. Once again they systematically conquered the neighborhood with Josh's dad Donnie, while Cindy (Josh's mom) and I sat in the driveway with GMom and family friend Vern and handed out candy. It was a beautiful night but we ran out of candy early this year (around 7:30).
I'm not really a fan of Halloween. Now christmas, that's my favorite holiday!
